  • 4 large ripe but firm peaches
  • 1/2 cup mascarpone cheese
  • 3 tablespoons honey
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)
  • Pinch of flaky sea salt
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your grill to medium-high heat (400-450°F). Clean the grates thoroughly with a grill brush.
  2. In a small bowl, combine 3 tablespoons honey, 2 tablespoons melted unsalted butter, 1/2 teaspoon vanilla extract, and 1/4 teaspoon cinnamon (if using). Whisk until smooth.
  3. Wash and dry the peaches. Cut each peach in half along the natural seam, twist to separate, and remove the pit.
  4. Generously brush the cut side of each peach half with the honey-butter mixture.
  5. Place the peaches cut side down on the hot grill grates. Grill undisturbed for 3-4 minutes until caramelized.
  6. Flip the peaches using tongs and grill skin side down for 2-3 minutes until tender but still holding their shape.
  7. Transfer the grilled peaches to a serving platter, cut side up, and let rest for 2-3 minutes.
  8. Spoon a generous dollop of mascarpone onto the center of each peach half.
  9. Drizzle any remaining honey-butter mixture over the top. Sprinkle with flaky sea salt and garnish with fresh mint if desired. Serve immediately.

Notes

For best results, use ripe but firm peaches. If you don’t have a grill, use a grill pan or cast-iron skillet over high heat. Let the peaches rest before adding mascarpone to prevent it from melting. Double the batch as leftovers are great in yogurt or oatmeal.
