  • 1/2 cup caramel sauce

  • 1/2 cup toffee bits
  • 34 medium apples, sliced (Honeycrisp, Granny Smith, or Fuji)
  • 2 tablespoons lemon juice

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the refrigerator at least 1 hour before starting. It needs to be truly soft, not just slightly cool. If you’re in a hurry, cut it into cubes and let it sit on the counter for 30 minutes, but don’t microwave it.
  2. Whip the cream cheese base: In a large mixing bowl, beat the softened cream cheese with an electric hand mixer on medium speed until completely smooth, about 2 minutes. Scrape down the sides and bottom of the bowl with a rubber spatula halfway through. Add the powdered sugar and vanilla extract, then beat on low speed until combined, then increase to medium and beat for another minute until fluffy.
  3. Whip the heavy cream: In a separate medium bowl, pour the cold heavy cream. Using clean beaters, whip on medium-high speed until stiff peaks form, about 3-4 minutes.
  4. Fold it all together: Add about one-third of the whipped cream to the cream cheese mixture and fold gently with the rubber spatula until just combined. Add the remaining whipped cream and fold until no white streaks remain.
  5. Assemble the dip: Transfer the cheesecake mixture to your serving dish and spread it into an even layer. Drizzle the caramel sauce over the top in a decorative pattern. Sprinkle the toffee bits evenly over the entire surface. If using, sprinkle the sea salt lightly over the top.
  6. Chill before serving: Cover the dish with plastic wrap and refrigerate for at least 30 minutes, or up to 24 hours.
  7. Prepare the apples: Just before serving, slice the apples and toss them with lemon juice to prevent browning. Arrange them around the dip or serve them on the side.

Temperature is everything—make sure cream cheese is at room temperature. Fold gently to keep the dip light and airy. The dip improves overnight, so making it ahead is recommended. For a warm version, bake at 350°F for 15-20 minutes.
