A grown-up twist on a classic Caesar salad, packed into a wrap and assembled bento-box style to keep everything crispy and fresh. Perfect for meal prep, picnics, or a satisfying lunch that feels like a tiny celebration.

Ingredients

Scale
  • 2 large flour tortillas (10-inch burrito size; use gluten-free if needed)
  • 2 cups cooked chicken breast, shredded or diced (rotisserie chicken works great)
  • 1 cup romaine lettuce, chopped into bite-sized pieces
  • 1/2 cup shaved Parmesan cheese (freshly shaved from a block)
  • 1/4 cup Caesar dressing (store-bought or homemade)
  • 1/2 cup croutons (homemade or store-bought; garlic-flavored adds a kick)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1/2 teaspoon black pepper, freshly ground
  • 1/4 teaspoon salt (optional, depending on dressing saltiness)
  • Small container for extra dressing (about 2 tablespoons)
  • Small container for extra croutons (about 1/4 cup)
  • Optional: cherry tomatoes, cucumber slices, or carrot sticks for extra crunch

Instructions

  1. Prepare the chicken: If using leftover rotisserie chicken, shred it with two forks or your fingers. If cooking fresh chicken, season boneless skinless breasts with salt, pepper, and a pinch of garlic powder. Pan-sear in a hot skillet with a tablespoon of olive oil over medium-high heat for 6-7 minutes per side, until internal temperature reaches 165°F. Let rest 5 minutes before shredding.
  2. Warm the tortillas: Heat a dry skillet over medium heat. Place one tortilla in the pan for about 30 seconds per side, until warm and pliable. This prevents cracking when rolling.
  3. Assemble the wrap: Lay the warm tortilla flat on a cutting board. Spread about 1 tablespoon of Caesar dressing in the center, leaving a 2-inch border. Layer shredded chicken, chopped romaine, shaved Parmesan, and a handful of croutons in the center. Squeeze lemon juice over everything and add a crack of black pepper. Do not overfill.
  4. Roll it tight: Fold the sides of the tortilla inward, then roll from the bottom up, keeping it snug but not tight enough to tear. Place seam-side down on a piece of parchment paper. Wrap tightly in parchment, then cut in half diagonally if eating right away.
  5. Pack the bento box: Place the wrapped wrap in the largest compartment of your bento box. In a small container, add 2 tablespoons of extra Caesar dressing. In another small container, add extra croutons. Fill remaining compartments with cherry tomatoes, cucumber slices, or carrot sticks.
  6. Refrigerate until lunch: Store the bento box in the refrigerator for up to 3 days. When ready to eat, remove the wrap from parchment, dip in extra dressing, and sprinkle extra croutons on top.

Notes

Keep dressing and croutons separate until serving to prevent sogginess. Warm tortillas are key to avoid cracking. Do not overfill—about 1 cup of filling per tortilla. Homemade croutons stay crunchier longer. The wrap is best enjoyed cold or at room temperature; do not reheat the whole wrap as lettuce will wilt.
