Ingredients

Scale
  • 3 cups cooked, shredded chicken (rotisserie chicken works perfectly)
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup buffalo wing sauce (Frank’s RedHot recommended)
  • 1/4 cup ranch dressing or blue cheese dressing
  • 1 tablespoon ranch seasoning mix (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded mozzarella cheese (or blend of mozzarella and cheddar)
  • 1 package (12-count) slider buns (Hawaiian sweet rolls recommended)
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder (for brushing tops)
  • 1 tablespoon sesame seeds or everything bagel seasoning (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with non-stick spray or butter.
  2. In a large mixing bowl, combine softened cream cheese, buffalo wing sauce, ranch dressing, ranch seasoning (if using), garlic powder, and black pepper. Beat with an electric hand mixer on medium speed until smooth and creamy, about 1 minute.
  3. Fold in shredded chicken and 1 cup of shredded mozzarella cheese. Stir until everything is evenly coated. The mixture should be thick and scoopable.
  4. Without separating the individual rolls, slice the entire pack of slider buns in half horizontally. Place the bottom half in the prepared baking dish, cut side up.
  5. Spread the buffalo chicken filling evenly over the bottom half of the buns. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese over the filling.
  6. Place the top half of the slider buns over the filling, cut side down. Press down gently.
  7. In a small bowl, mix melted butter with remaining 1/2 teaspoon garlic powder. Brush this mixture generously over the tops of the buns. Sprinkle with sesame seeds or everything bagel seasoning if desired.
  8. Cover the baking dish with aluminum foil and bake for 15 minutes. Remove foil and bake for another 5-7 minutes, until tops are golden brown and cheese is bubbly.
  9. Let the sliders rest in the pan for 5 minutes before slicing along the seams of the individual rolls. Serve warm.

Notes

Do not skip the foil step—covering first ensures perfectly golden, soft buns with a hot, melty center. Use a serrated knife with a gentle sawing motion when slicing to keep buns intact. For make-ahead, assemble completely (without butter wash), cover, and refrigerate up to 24 hours; add butter wash and add 5-7 minutes to covered baking time.
