  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ½ cup (113g) unsalted butter
  • ⅔ cup (135g) granulated sugar
  • ⅓ cup (70g) packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups (about 3 medium) very ripe bananas, mashed
  • ½ cup (120g) plain full-fat Greek yogurt or sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving an overhang on two sides.
  2. Brown the butter: Cut ½ cup unsalted butter into pieces and melt in a light-colored saucepan over medium heat, stirring constantly. Once it turns golden-amber and smells nutty, remove from heat and pour into a heat-safe bowl. Let cool for 10 minutes.
  3. Mash the bananas in a medium bowl until mostly smooth with a few lumps. Set aside.
  4. In a large bowl, whisk together flour, baking soda, and salt.
  5. In another bowl, whisk together cooled browned butter, granulated sugar, and brown sugar until combined. Add eggs one at a time, whisking well after each. Stir in vanilla.
  6. Fold mashed bananas and Greek yogurt into the wet mixture using a rubber spatula until just combined.
  7. Pour wet ingredients into dry ingredients and fold gently until no streaks of flour remain. Do not overmix.
  8. Pour batter into prepared loaf pan and spread evenly. Tap pan on counter to release air bubbles.
  9. Bake for 55-65 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 45 minutes.
  10. Cool in pan on a wire rack for 15 minutes, then lift out using parchment sling and cool completely on rack. Do not slice while warm.

Notes

For best flavor, wrap cooled bread in plastic wrap and let sit overnight. Use an oven thermometer for accuracy. If using an 8×4-inch pan, increase baking time by 10 minutes. For muffins, bake 18-22 minutes.
