  • 4 large eggs, room temperature
  • 4 sandwich buns or English muffins, lightly toasted (whole wheat or gluten-free optional)
  • 4 slices sharp cheddar cheese or preferred melting cheese
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional toppings: sliced avocado, tomato, baby spinach, or hot sauce

Instructions

  1. In a mixing bowl, combine ground pork sausage with garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently until evenly combined.
  2. Divide the sausage mixture into 4 equal portions. Shape each into a round patty about 3 inches in diameter and 1/2 inch thick. Make a shallow indentation in the center of each patty.
  3. Heat a skillet over medium heat and add a small drizzle of oil if sausage is lean. Cook patties for 4-5 minutes per side until browned and cooked through (internal temp 160°F). Avoid pressing down on patties.
  4. While sausage cooks, split and toast sandwich buns or English muffins to golden perfection. Butter them lightly.
  5. In a clean skillet, melt 1 tablespoon butter over medium-low heat. Crack an egg into the skillet (use an egg ring if desired). Cook gently until whites are set and yolks are runny or cooked to preference, about 3-4 minutes. Season with salt and pepper.
  6. Assemble sandwich by placing a sausage patty on the bottom bun, adding a slice of cheese to melt slightly, topping with the cooked egg, and adding optional toppings. Cap with the top bun.
  7. Serve immediately while warm and melty.

Notes

Cook sausage patties on medium heat without pressing to keep them juicy. Cook eggs gently on medium-low heat to avoid rubbery texture. Toast buns well and optionally add a thin layer of mayo to prevent sogginess. Cheese melts best when added to hot sausage and covered briefly.
