  • 3/4 cup packed brown sugar (dark brown sugar preferred)
  • 1 can (about 20 oz) pineapple slices, juice reserved
  • 20 to 30 whole cloves
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup water
  • Optional: fresh rosemary sprigs for garnish
  • Optional: splash of apple cider vinegar

Instructions

  1. Remove the ham from its packaging and pat dry with paper towels. Score the surface in a diamond pattern about 1/8 inch deep, spacing cuts 1 to 1.5 inches apart.
  2. Insert whole cloves into the center of each diamond, spacing evenly.
  3. In a small bowl, whisk together brown sugar, honey, Dijon mustard, cinnamon, pineapple juice, and water until smooth and pourable.
  4. Place a layer of pineapple slices at the bottom of the slow cooker.
  5. Set the ham on top of the pineapple slices, flat side down if possible. Pour half of the glaze over the ham and brush evenly to coat.
  6. Cover and cook on low for 4 to 5 hours, basting the ham with remaining glaze every hour to build a sticky coating.
  7. Optional: For a caramelized finish, transfer ham to a baking sheet and broil for 3-5 minutes, watching carefully to avoid burning.
  8. Let the ham rest for 10 minutes before slicing and serving warm.

Notes

If your slow cooker runs hot, check the ham after 3.5 hours to avoid overcooking. Basting every hour builds a rich glaze. Rotate the ham halfway through cooking for even glaze coverage. Optional broil adds caramelized finish. Can substitute honey with maple syrup and brown sugar with coconut sugar. For low-sugar option, use erythritol. Fresh pineapple can replace canned with added water to glaze.
