  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper, to taste
  • 1 tbsp Worcestershire sauce (optional)
  • 4 slices sharp cheddar cheese
  • 4 strips crispy bacon, thick-cut
  • 1 cup iceberg lettuce, shredded
  • 1 large tomato, sliced
  • 1 small red onion, thinly sliced
  • Pickles, sliced (dill or bread-and-butter)
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp smoked paprika
  • 1 tsp pickle juice
  • Pinch of cayenne pepper (optional)
  • 4 burger buns, toasted (brioche or potato buns)
  • Butter or oil for toasting buns

Instructions

  1. Prepare the sauce: In a small bowl, whisk together mayonnaise, ketchup, mustard, smoked paprika, pickle juice, and cayenne pepper until smooth. Cover and refrigerate.
  2. Cook the bacon: Heat a skillet over medium heat. Cook bacon strips until crispy, about 3-5 minutes per side. Drain on paper towels.
  3. Mix the beef: In a mixing bowl, combine ground beef, garlic powder, onion powder, Worcestershire sauce, salt (about 1 tsp), and pepper (½ tsp). Mix gently until combined.
  4. Form the patties: Divide meat into 4 equal portions (about 4 oz each). Shape into ¾ inch thick patties with a slight indentation in the center.
  5. Preheat the pan: Heat skillet over medium-high heat until very hot (2-3 minutes). Lightly oil the pan or brush oil on patties.
  6. Cook the patties: Place patties in pan and cook 3-4 minutes without moving. Flip and cook another 3 minutes. Add cheese slices during last minute and cover to melt.
  7. Toast the buns: Spread butter on cut sides and toast in skillet over medium heat until golden brown, about 1-2 minutes per side.
  8. Assemble the burgers: Spread sauce on bottom bun. Layer lettuce, tomato, onion, cheesy patty, bacon, and pickles. Top with bun and more sauce if desired.
  9. Serve immediately with your favorite sides.

Notes

Do not press down on patties while cooking to keep them juicy. Let patties rest for a minute after cooking. Sauce can be made ahead and refrigerated. Toast buns last to prevent sogginess.
