  • 1 teaspoon fresh thyme, chopped (optional)
  • 1/4 cup chicken broth
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, whisk together honey, Dijon mustard, and minced garlic to prepare the honey mustard sauce. Set aside.
  3. Pat dry the chicken breasts with paper towels, then season both sides with salt, pepper, and fresh thyme.
  4. Heat olive oil over medium-high heat in a large skillet. Sear the chicken breasts for 3-4 minutes per side until golden brown but not fully cooked.
  5. Remove chicken from the pan, brush generously with the honey mustard sauce, then wrap each breast with two bacon strips, securing with toothpicks if needed.
  6. Place the wrapped chicken in an oven-safe baking dish, drizzle remaining honey mustard sauce over the top, and pour chicken broth into the bottom of the dish.
  7. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the bacon is crispy. Broil for 1-2 minutes if bacon needs extra crisping, watching carefully.
  8. Remove chicken and let rest. Pour pan juices into a small saucepan, add butter, and simmer over low heat for 2 minutes to thicken the sauce.
  9. Drizzle the buttery pan sauce over the chicken and serve immediately.
