  • 1 cup (200 grams) packed brown sugar (dark or light)
  • ½ cup (4 fl oz) pineapple juice (preferably unsweetened or 100% juice)
  • ¼ cup (3 tablespoons) honey (raw or organic preferred)
  • 2 tablespoons Dijon mustard
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground cinnamon (optional)
  • Fresh pineapple slices (optional, for garnish or roasting)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Remove the ham from packaging. Score the fat in diamond shapes about ¼ inch deep with a sharp knife.
  3. In a small saucepan, combine brown sugar, pineapple juice, honey, Dijon mustard, cloves, and cinnamon. Simmer over medium heat, stirring constantly until sugar dissolves and glaze thickens slightly, about 5 minutes. Remove from heat.
  4. Place the ham on a rack in a roasting pan. Brush the first generous layer of glaze all over the scored surface. Reserve some glaze for later basting.
  5. Bake the ham uncovered for about 1 hour and 15 minutes (approximately 15 minutes per pound). Baste with glaze every 15–20 minutes to build a sticky, shiny coating. Use a meat thermometer to check for an internal temperature of 140°F (60°C).
  6. Remove the ham from the oven and tent loosely with foil. Let rest for 15 minutes before slicing.
  7. Optional: Roast pineapple slices in the oven for 10 minutes until caramelized and serve alongside the ham.

Notes

If glaze starts to burn, lower oven temperature and tent ham with foil. Use a meat thermometer to avoid overcooking. Scoring the fat helps glaze penetrate and caramelize. Glaze can be made a day ahead and reheated before use. For vegan variation, substitute honey with maple syrup and use plant-based ham.
