A quick and easy salmon recipe featuring a sweet-savory honey garlic glaze and perfectly crispy skin, ready in about 25 minutes. Perfect for weeknight dinners or impressing guests with minimal fuss.

  • 3 tablespoons honey (raw or local preferred)
  • 3 cloves garlic, minced
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons olive oil
  • Freshly cracked black pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat salmon fillets dry with paper towels. Season both sides lightly with black pepper; avoid salting as soy sauce adds saltiness.
  2. In a small bowl, whisk together honey, minced garlic, soy sauce, and rice vinegar. Set aside.
  3. Heat a non-stick or cast iron skillet over medium-high heat and add olive oil. Wait until the oil shimmers but isn’t smoking.
  4. Place salmon fillets skin-side down in the skillet. Press lightly with a spatula for the first 30 seconds to prevent curling. Cook undisturbed for 6-7 minutes until skin is golden and crisp.
  5. Carefully flip the salmon fillets. Pour the honey garlic glaze over the fillets and let it bubble and thicken slightly. Spoon the glaze continuously over the salmon for a sticky, shiny finish.
  6. Cook for an additional 2-3 minutes until salmon is just cooked through (internal temperature about 125°F / 52°C for medium doneness). Watch glaze carefully to avoid burning.
  7. Remove salmon from pan and let rest for 2 minutes to allow juices to redistribute before serving.

Notes

Pat salmon skin dry before cooking for best crispiness. Do not move salmon too soon to avoid tearing skin. Use medium-high heat to balance crispiness and glaze caramelization. Add glaze after flipping to prevent burning. For gluten-free, substitute soy sauce with tamari. Optional spicy kick with red pepper flakes or sriracha. Oven finish option: after searing skin-side down, transfer pan to 400°F (200°C) oven for 5 minutes to finish cooking.
