  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • 1 bay leaf
  • 4 soft hoagie rolls or French baguette, sliced lengthwise
  • Provolone or Swiss cheese slices (optional)
  • Butter, for toasting rolls (unsalted preferred)

Instructions

  1. Pat the roast beef slices dry with paper towels. Season lightly with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat. Sear beef slices in a single layer for 1-2 minutes per side until browned. Remove and set aside.
  3. In a medium saucepan, sauté sliced onions in a splash of olive oil until translucent and lightly caramelized, about 5-7 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add beef broth, Worcestershire sauce, thyme, and bay leaf to the saucepan. Stir and bring to a gentle simmer over medium heat.
  5. Add seared beef slices to the broth and simmer gently for 15-20 minutes. Season with salt and pepper to taste. Remove bay leaf before serving.
  6. Butter the insides of the hoagie rolls lightly and toast them in a skillet over medium heat until golden brown and crispy.
  7. Assemble sandwiches by piling warm beef slices onto toasted rolls and topping with cheese if desired. Let cheese melt from residual heat.
  8. Serve sandwiches with au jus in small bowls for dipping.
