  • 1 ounce fresh lime juice per serving
  • 1/2 ounce triple sec or Cointreau per serving
  • 1 teaspoon simple syrup per serving (adjust to taste)
  • Tajín seasoning for rimming the glass
  • Coarse salt (optional, mixed with Tajín for rim)
  • Ice cubes for shaking and serving
  • Lime wedges for garnish

Instructions

  1. Place 4 cups of cubed, seedless watermelon into a blender and blend on high for about 30 seconds until smooth.
  2. Pour the blended watermelon through a fine mesh strainer into a bowl to remove pulp if a clearer juice is preferred.
  3. On a small plate, combine 1 tablespoon Tajín seasoning and 1/2 teaspoon coarse salt.
  4. Rub a lime wedge around the rim of your glass, then dip the rim into the Tajín mixture, pressing lightly so it sticks. Set the glass aside.
  5. In a cocktail shaker, combine 2 ounces tequila blanco, 1 ounce fresh lime juice, 1/2 ounce triple sec, 1 teaspoon simple syrup, and 4 ounces watermelon juice.
  6. Add ice to fill the shaker halfway, secure the lid, and shake vigorously for about 15 seconds until chilled.
  7. Strain the mixture into the prepared glass over fresh ice cubes.
  8. Garnish with a lime wedge or small watermelon slice on the rim.
  9. Serve immediately and enjoy.
