A quick and easy homemade citrus slushy perfect for hot days, combining fresh lemon juice, simple syrup, and crushed ice for a refreshing icy treat.

  • 45 medium fresh lemons, juiced (about 1 cup or 240ml lemon juice)
  • 1 cup (200g) granulated sugar
  • 2 cups (480ml) water
  • 4 cups (about 600g) ice cubes or crushed ice
  • Optional: a handful of fresh mint leaves

Instructions

  1. Make the simple syrup by combining 1 cup (240ml) water and 1 cup (200g) granulated sugar in a small saucepan. Heat over medium heat, stirring occasionally, until the sugar dissolves completely (about 5 minutes). Remove from heat and let cool.
  2. Juice 4-5 medium lemons to yield approximately 1 cup (240ml) of fresh lemon juice. Strain out seeds and pulp for a smoother slushy.
  3. In a blender, combine the freshly squeezed lemon juice, 1 cup (240ml) cold water, the cooled simple syrup, and 4 cups (about 600g) of ice cubes or crushed ice.
  4. Blend on high until the mixture reaches a smooth, icy slushy consistency, about 30-45 seconds. Adjust thickness by adding more water or ice as needed.
  5. Optionally, add a handful of fresh mint leaves and pulse once or twice to incorporate without pulverizing.
  6. Serve immediately in chilled glasses, garnished with a lemon wheel or mint sprig.

Notes

Use fresh lemon juice for best flavor; bottled lemon juice is not recommended. Let the simple syrup cool before blending to prevent melting the ice too quickly. Crush ice beforehand if your blender struggles with large cubes. Blend just until smooth to maintain icy texture. Garnish with mint or lemon wheel for added aroma and presentation. Variations include adding berries, yogurt, or alcohol for different twists.
