Instructions

  1. Rinse strawberries, blueberries, and raspberries gently under cold water. Remove stems and slice the strawberries. Pat all berries dry with paper towels to avoid watery layers.
  2. Cut sponge or pound cake into 1-inch cubes. Toss cubes with a splash of berry liqueur or juice if desired and let sit for 5 minutes to soak.
  3. Chill mixing bowl and beaters in the fridge for 10 minutes. Pour cold heavy cream into the bowl, add powdered sugar and vanilla extract. Beat on medium-high speed until soft peaks form, about 5-7 minutes.
  4. In a clear bowl, layer cake cubes evenly on the bottom. Add a generous layer of whipped cream over the cake. Scatter a mix of berries over the cream. Repeat layering cake, cream, and berries until the bowl is full, finishing with a berry layer on top.
  5. Cover the trifle with plastic wrap and refrigerate for at least 2 hours or overnight to let flavors meld and cake soften slightly. Optionally garnish with fresh mint leaves or a dusting of powdered sugar before serving.

Keep mixing bowl chilled before whipping cream for best texture. Avoid over-soaking cake cubes to prevent sogginess. Use fresh berries for best flavor; thaw and drain frozen berries if used.
