A quick and easy breakfast charcuterie board featuring homemade flaky pastries paired with fresh fruits, cheeses, and cured meats. Perfect for brunch, potlucks, or lazy mornings.

Ingredients

  • All-purpose flour (2 ½ cups / 315 g)
  • Unsalted butter, cold and cubed (1 cup / 225 g)
  • Cold water (½ cup / 120 ml), plus extra as needed
  • Salt (1 tsp)
  • Granulated sugar (1 tbsp) – optional
  • Strawberries, hulled and halved (1 cup)
  • Blueberries (1 cup)
  • Green grapes, halved (1 cup)
  • Apple slices, thin (1 medium apple)
  • Oranges, peeled and segmented (2 small oranges)
  • Variety of cheeses (Brie, sharp cheddar, goat cheese)
  • Cured meats (prosciutto, salami, smoked ham)
  • Mixed nuts (almonds, walnuts)
  • Honey or fruit preserves for drizzling
  • Fresh herbs for garnish (mint or basil)

Instructions

  1. In a large bowl, whisk together 2 ½ cups (315 g) all-purpose flour, 1 tsp salt, and 1 tbsp sugar (if using).
  2. Add 1 cup (225 g) cold, cubed unsalted butter. Cut butter into flour using a pastry cutter or two forks until mixture resembles coarse crumbs with pea-sized bits of butter.
  3. Slowly pour in ½ cup (120 ml) cold water, stirring gently with a fork until dough begins to come together. Add more water if too dry.
  4. Form dough into a disk, wrap tightly in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  6. Roll out chilled dough on a lightly floured surface to about ¼ inch (6 mm) thickness. Cut into desired shapes and transfer to baking sheet.
  7. Optional: Beat one egg with a tablespoon of water and brush over pastries for a golden finish.
  8. Bake pastries for 15-20 minutes or until golden brown and puffed.
  9. While pastries bake, wash and prepare fresh fruits. Slice apples thinly and soak in lemon water to prevent browning.
  10. Arrange cheeses, meats, nuts, honey, and fresh herbs on a large platter.
  11. Once pastries have cooled slightly, arrange them alongside fruits and other board items.
  12. Serve immediately with coffee or fresh juice.

Notes

Keep butter and water ice-cold for flaky layers. Do not overmix dough to avoid toughness. Use egg wash for a golden crust. Chill dough if sticky. Store pastries in airtight container at room temperature up to 2 days or freeze before baking. Reheat in oven at 350°F for 5-7 minutes. Soak apple slices in lemon water to prevent browning. Can substitute store-bought puff pastry for convenience.
