  • 1 cup (240 ml) whole milk
  • 1 cup (230 g) unsalted butter, softened (for frosting)
  • 4 cups (480 g) powdered sugar, sifted
  • 2 tsp pure vanilla extract (for frosting)
  • 24 tbsp (3060 ml) whole milk or cream (for frosting)
  • Pinch of salt (for frosting)
  • 1 ½ cups (225 g) fresh strawberries, hulled and sliced
  • 1 cup (150 g) fresh blueberries
  • Optional: a handful of fresh raspberries or blackberries for extra color

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line bottoms with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat 1 cup softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Alternately add the flour mixture and milk to the batter, starting and ending with flour. Mix until just combined; do not overmix.
  6. Divide batter evenly between the two pans and smooth tops. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Rotate pans halfway through baking.
  7. Let cakes cool in pans for 10 minutes, then turn out onto cooling racks. Cool completely before frosting.
  8. To prepare frosting, beat 1 cup softened butter until creamy. Gradually add powdered sugar, beating on low speed. Add vanilla extract, salt, and 2-4 tbsp milk until smooth and spreadable. Adjust consistency as needed.
  9. Place one cake layer on serving plate. Spread an even layer of frosting on top. Add second layer and cover entire cake with a thin crumb coat of frosting. Chill for 15 minutes to set.
  10. Apply a final smooth layer of frosting over the cake.
  11. Arrange fresh strawberries in rows to mimic the red stripes of the flag and cluster blueberries in the top-left corner to represent the blue field with stars.
  12. Serve at room temperature.

Use room temperature ingredients for best results. Do not overmix batter to avoid tough cake. Cool cakes completely before frosting to prevent melting.
