  • 3/4 cup (165 g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (270 g) semi-sweet chocolate chips
  • About 24 Cadbury Mini Eggs, unwrapped

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat 1 cup softened unsalted butter with 3/4 cup granulated sugar and 3/4 cup packed light brown sugar until light and fluffy, about 3-4 minutes with an electric mixer.
  3. Beat in 2 large eggs, one at a time, then mix in 1 teaspoon pure vanilla extract until smooth and glossy.
  4. In a separate medium bowl, whisk together 2 1/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt. Gradually add this to the wet ingredients, mixing on low speed just until combined.
  5. Gently fold in 1 1/2 cups semi-sweet chocolate chips with a spatula.
  6. Using a cookie scoop or two spoons, scoop about 2 tablespoons (30 g) of dough. Flatten it slightly in your palm, place one Cadbury egg in the center, then carefully wrap the dough around the egg, sealing it completely.
  7. Place the stuffed cookie dough balls on the prepared baking sheet about 2 inches apart.
  8. Bake for 12-14 minutes until cookies are golden brown around the edges but still soft in the center.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Chill the dough for 15-20 minutes before wrapping the eggs to make handling easier and reduce spreading. Seal the dough well around the Cadbury eggs to prevent leakage. Use fresh Cadbury eggs for best melting results. If chocolate oozes out, use more dough next time. Cookies can be stored at room temperature for up to 3 days or frozen for up to 2 months.
