  • 1 ¾ cups (220g) whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • ½ cup (120ml) plain non-fat Greek yogurt
  • ¼ cup (60ml) honey or maple syrup
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup (60g) chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan with coconut oil or line it with parchment paper.
  2. Mash the bananas in a large bowl using a fork or potato masher until smooth but still a bit chunky.
  3. In a separate bowl, whisk together Greek yogurt, honey or maple syrup, eggs, vanilla extract, and apple cider vinegar until combined.
  4. In another bowl, sift or mix whole wheat flour, baking soda, cinnamon, and salt until no lumps remain.
  5. Slowly fold the dry ingredients into the wet mixture gently with a spatula, stopping as soon as blended to avoid overmixing.
  6. Fold the mashed bananas into the batter evenly.
  7. Optionally, fold in chopped walnuts or pecans.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 50–60 minutes, checking at 50 minutes by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  10. Cool the bread in the pan for 10 minutes, then transfer to a cooling rack to prevent sogginess and allow it to set.

Notes

Do not overmix the batter to keep the bread fluffy. Use ripe bananas for best sweetness and flavor. Let eggs and yogurt come to room temperature before mixing. Tent with foil if the top browns too quickly. Rest the bread after baking to allow flavors to meld and crumb to firm up.
