Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt and pepper. (About 5 minutes)
  2. Heat a large skillet over medium heat. Add olive oil and 2 tablespoons butter. Wait until butter melts and foams but does not brown (about 2 minutes).
  3. Add minced garlic to the pan and stir constantly to avoid burning. Cook until fragrant, about 30 seconds to 1 minute.
  4. Add shrimp in a single layer. Cook for 2-3 minutes on one side until pink and slightly opaque, then flip and cook another 1-2 minutes. Avoid overcrowding or stirring too much.
  5. Pour in white wine (or chicken broth) and lemon juice. Add remaining 2 tablespoons butter. Simmer gently for about 2 minutes, stirring occasionally, until sauce thickens slightly.
  6. Stir in red pepper flakes if using, adjust salt and pepper to taste, and toss in fresh parsley. Remove from heat.
  7. Serve immediately over cooked pasta or alongside crusty bread.

Notes

Do not overcrowd the pan to avoid soggy shrimp. Use fresh garlic and cook on medium-low heat to prevent bitterness. Add butter in two stages to avoid burning. If sauce is too thin, simmer longer; if too thick, add reserved pasta water or broth. For dairy-free, substitute vegan butter or use olive oil only.
