A quick and easy parfait combining fresh berries, creamy Greek yogurt, and crunchy granola for a healthy and delicious breakfast or snack.

Ingredients

Scale
  • 2 cups (480 ml) Greek yogurt (plain or vanilla-flavored)
  • 2 cups (300 grams) mixed fresh berries (strawberries hulled and sliced, blueberries, raspberries, blackberries)
  • 1 cup (100 grams) crunchy granola (low-sugar with nuts and seeds)
  • 2 tablespoons (30 ml) honey or maple syrup (optional)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 tablespoon (10 grams) chia seeds (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Rinse all the berries gently under cold water. Drain well and pat dry with paper towels. Hull and slice strawberries into thin pieces for easy layering. Set aside.
  2. In a medium bowl, combine Greek yogurt with honey or maple syrup and vanilla extract. Stir well until smooth and slightly glossy.
  3. In serving glasses or jars, start with a spoonful of the yogurt mixture. Add a layer of mixed berries (about 1/4 cup or 40 grams), then sprinkle with crunchy granola (about 2 tablespoons or 20 grams). Repeat layers until the glass is filled (2-3 layers).
  4. Top with a generous handful of fresh berries and a final sprinkle of granola. Add fresh mint leaves if desired.
  5. Serve immediately to keep granola crunchy, or chill and add granola just before serving.

Notes

Add granola just before serving to keep it crunchy. Use fresh ripe berries for best flavor. Frozen berries can be used if thawed and drained. Stir chia seeds into yogurt and let sit 5 minutes for extra texture. Substitute dairy-free yogurt and gluten-free granola for dietary needs.
