A quick and easy parfait featuring creamy Greek yogurt layered with fresh seasonal fruit and crunchy granola, perfect for breakfast, brunch, or a healthy snack.

Ingredients

  • Greek yogurt, plain or vanilla (full-fat preferred, low-fat works too)
  • Fresh fruit such as strawberries (hulled and sliced), blueberries (washed), bananas (sliced), peaches or nectarines (diced), pomegranate seeds
  • Granola, your favorite crunchy mix (e.g., honey-almond granola)
  • Honey or maple syrup (optional, for drizzling and extra sweetness)
  • Chia seeds or flaxseeds (optional, for nutritional boost)
  • Vanilla extract (optional, a splash to enhance yogurt flavor)

Instructions

  1. Rinse all fresh fruit under cold water. Hull and slice strawberries, peel and slice bananas, dice peaches or nectarines, and remove seeds from pomegranates if using. Set aside. (Prep time: 5-7 minutes)
  2. In a mixing bowl, stir Greek yogurt with a splash of vanilla extract and honey or maple syrup if desired for added sweetness. (Prep time: 2 minutes)
  3. Spoon about 1/4 cup of yogurt into the bottom of each glass or jar. Smooth gently with the back of a spoon.
  4. Add a generous layer of mixed fruit, about 1/4 cup, distributing colors evenly.
  5. Sprinkle 2-3 tablespoons of granola over the fruit layer.
  6. Repeat layering of yogurt, fruit, and granola until the glass is filled, ending with granola and a few fresh berries on top for garnish.
  7. Optionally, sprinkle chia seeds or flaxseeds on the top layer for extra nutrition and texture.
  8. Serve immediately or refrigerate for up to 2 hours to let flavors meld. Add granola just before serving if chilling longer to prevent sogginess.

Notes

Add granola just before serving to keep it crunchy. Use ripe but firm fruit to avoid watery parfait. Vanilla extract and honey/maple syrup are optional but enhance flavor. Frozen fruit can be used if thawed and drained well. For vegan version, substitute Greek yogurt with coconut or almond-based yogurt and use nut-based granola.
