A refreshing and easy-to-make summer drink combining cool cucumber, zesty lime, and fresh mint with a touch of natural sweetness and sparkling water.

Ingredients

  • 1 medium cucumber, peeled and thinly sliced (English cucumber recommended)
  • Juice of 2 limes (about 3 tablespoons)
  • 1012 fresh mint leaves, gently muddled
  • 1 to 2 tablespoons honey or agave syrup, adjusted to taste
  • 4 cups (32 fl oz) chilled sparkling water
  • Ice cubes as needed
  • Optional: pinch of sea salt
  • Optional: splash of gin or vodka for an adult twist

Instructions

  1. Peel the cucumber in stripes or fully, then slice into thin rounds about 1/8 inch thick.
  2. Place fresh mint leaves in a pitcher and gently muddle 8-10 times to release oils without shredding.
  3. Add freshly squeezed lime juice and honey or agave syrup to the pitcher; stir gently until sweetener dissolves.
  4. Add sliced cucumber and chilled sparkling water to the pitcher; stir gently to combine.
  5. Add ice cubes to keep the cooler cold and let sit for about 5 minutes to let flavors mingle. Optionally refrigerate for 15-20 minutes before serving.
  6. Pour into individual glasses and garnish with a sprig of mint or a thin cucumber slice. Optionally add a splash of spirit for a cocktail twist.

Notes

Be gentle when muddling mint to avoid bitterness. Use fresh lime juice for best flavor. Chill all ingredients and glassware for maximum refreshment. Serve within 2 hours for best fizz and freshness. Optionally add a splash of gin or vodka for an adult version. Sweetness can be adjusted or replaced with stevia or monk fruit for sugar-free options.
