  • 2 medium English cucumbers, sliced into ½-inch rounds
  • 8 ounces cream cheese, softened to room temperature
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon lemon zest, freshly grated
  • ¼ teaspoon garlic powder
  • Salt and freshly cracked black pepper, to taste
  • Optional garnish: smoked paprika or small sprig of dill

Instructions

  1. Rinse and dry the English cucumbers. Slice into ½-inch (1.25 cm) rounds using a sharp knife.
  2. Lay cucumber slices on a paper towel-lined tray and lightly salt each slice. Let sit for 10 minutes to release excess moisture, then pat dry with another paper towel.
  3. In a medium mixing bowl, beat the softened cream cheese with a hand mixer or whisk until smooth and fluffy, about 2-3 minutes.
  4. Fold in chopped dill, chives, lemon zest, garlic powder, salt, and pepper. Adjust seasoning to taste.
  5. Using a small spoon or piping bag, dollop or pipe about 1 teaspoon (5 ml) of the cream cheese mixture onto each cucumber slice.
  6. Garnish each bite with a pinch of smoked paprika or a small dill sprig if desired.
  7. Arrange the bites on a serving platter, cover with plastic wrap, and chill for at least 15 minutes before serving.
  8. Before serving, check for moisture on the cucumber bottoms and pat dry if needed. Serve chilled.

Salting and drying cucumber slices is essential to prevent sogginess. Use room temperature cream cheese for smooth mixing.
