A refreshing and easy-to-make mocktail combining crisp cucumber juice and aromatic basil with a touch of natural sweetness and sparkling water.

Ingredients

  • 1 medium cucumber, peeled and chopped
  • 1012 fresh basil leaves, gently washed
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1 tablespoon honey or agave nectar (adjust to taste)
  • 1 cup (8 fl oz) sparkling water
  • Ice cubes as needed
  • Mint leaves (optional, for garnish)

Instructions

  1. Peel and chop the cucumber into chunks. Blend in a blender or food processor until smooth, about 30 seconds. Strain through a fine mesh sieve if a smoother texture is desired, yielding about 3/4 cup (6 fl oz) cucumber juice.
  2. Place basil leaves in a glass or small bowl and gently muddle with a muddler or wooden spoon about 10 times to release oils without bitterness.
  3. In a pitcher or large glass, combine cucumber juice, muddled basil, lemon juice, and honey or agave nectar. Stir until sweetener dissolves.
  4. Add sparkling water and stir gently to combine. Add ice cubes to chill the mocktail.
  5. Pour into serving glasses and garnish with fresh mint or an extra basil leaf. Serve immediately.

Notes

Use organic cucumbers for best flavor. Avoid over-muddling basil to prevent bitterness. Chill sparkling water before mixing to keep fizz longer. Prepare cucumber juice base ahead but add sparkling water and ice just before serving. Variations include adding berries, jalapeΓ±o, or swapping basil for mint or cilantro.
