  • 1 cup (240 ml) fresh small-curd cottage cheese
  • ½ cup (75 g) strawberries, hulled and sliced
  • ½ cup (75 g) blueberries, fresh
  • 1 medium kiwifruit, peeled and diced
  • ½ cup (90 g) mandarin orange segments, peeled
  • ½ ripe banana, sliced
  • 1 teaspoon (5 ml) fresh lemon juice
  • 1 tablespoon (15 ml) honey or maple syrup (optional)
  • 2 tablespoons (30 g) chopped toasted nuts (almonds or walnuts, optional)
  • Fresh mint leaves for garnish

Instructions

  1. Rinse all fresh fruit under cold water. Hull and slice strawberries, peel and dice kiwifruit, segment mandarins, and slice the banana. Set aside in a bowl.
  2. In a mixing bowl, add 1 cup (240 ml) small-curd cottage cheese. Drizzle in 1 teaspoon (5 ml) fresh lemon juice and gently fold together to brighten the flavor.
  3. Gently fold the prepared fruit into the cottage cheese mixture, being careful not to mash delicate berries.
  4. Drizzle 1 tablespoon (15 ml) honey or maple syrup over the bowl, then give a light stir to combine (optional).
  5. Sprinkle chopped toasted nuts on top for crunch and add a few fresh mint leaves for garnish. Serve immediately or chill briefly.

Notes

Use small-curd cottage cheese for best texture. Pat berries dry if too watery to avoid thinning the cottage cheese. Slice bananas last to prevent browning. Toast nuts in a dry skillet for 3-4 minutes for extra crunch and flavor. Serve immediately or chill briefly. Store cottage cheese and fruit separately if preparing ahead to prevent sogginess.
