Fresh Caprese skewers with easy balsamic glaze are a quick, simple, and elegant appetizer perfect for parties, combining juicy cherry tomatoes, creamy mozzarella, and fragrant basil with a sweet tangy glaze.

  • 20 cherry tomatoes, ripe and firm
  • 20 small fresh mozzarella balls (bocconcini), drained
  • 20 large fresh basil leaves, whole
  • 2 tablespoons extra virgin olive oil
  • ½ cup balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 20 wooden skewers or toothpicks (soaked in water for 15 minutes if wooden)

Instructions

  1. Combine ½ cup (120 ml) balsamic vinegar and 1 tablespoon (15 g) honey or brown sugar in a medium saucepan. Stir gently to combine.
  2. Place the saucepan over medium heat and bring to a gentle boil. Reduce heat to low and let it simmer, stirring occasionally, until the liquid thickens and coats the back of a spoon—about 10-12 minutes. Watch closely to avoid burning.
  3. Remove from heat and let the glaze cool slightly. It will thicken more as it cools.
  4. Rinse the cherry tomatoes and basil leaves. Pat dry thoroughly to prevent sogginess.
  5. Drain the mozzarella balls and gently pat them dry with paper towels to remove excess moisture.
  6. Thread one cherry tomato, one basil leaf (folded if large), and one mozzarella ball onto each skewer. Repeat until all ingredients are used—about 20 skewers.
  7. Arrange skewers on a serving platter. Drizzle lightly with 2 tablespoons (30 ml) extra virgin olive oil, sprinkle a pinch of salt and freshly ground black pepper over the top.
  8. Using a spoon, drizzle the balsamic glaze over the skewers generously just before serving. For a cleaner look, use a squeeze bottle or small brush.
  9. If desired, garnish the platter with extra basil leaves or a sprinkle of flaky sea salt for texture contrast.

Notes

Soak wooden skewers in water for 15 minutes before use to prevent burning if grilling. Drizzle balsamic glaze just before serving to keep colors fresh. If glaze thickens too much, stir in a splash of water to loosen. For vegan version, use vegan mozzarella and substitute honey with maple syrup or agave nectar.
