  • 1/4 cup yellow onion, finely diced
  • 1/2 cup mixed bell peppers (red, yellow, or orange), diced
  • 1/2 cup baby spinach, roughly chopped
  • 1/4 cup cherry tomatoes, halved (optional)
  • 1 tablespoon fresh herbs (parsley or chives), chopped
  • 1 small clove garlic, minced (optional)

Instructions

  1. Prep the veggies: Dice the yellow onion and bell peppers into small, even pieces. Roughly chop the baby spinach and halve the cherry tomatoes. Mince the garlic if using.
  2. Beat the eggs: Crack 4 large eggs into a mixing bowl. Add 2 tablespoons of milk, a pinch of kosher salt, and freshly ground black pepper. Whisk vigorously until pale yellow and slightly frothy.
  3. Sauté the veggies: Heat 1 tablespoon of butter or olive oil in a 10-inch non-stick skillet over medium heat. Add diced onions and peppers and cook, stirring occasionally, until softened but not browned (about 3 minutes). Add garlic and cook for 30 seconds until fragrant. Toss in spinach and cherry tomatoes and cook until spinach wilts, about 1-2 minutes. Season lightly with salt and pepper.
  4. Cook the eggs: Reduce heat to low. Pour the beaten eggs evenly over the sautéed veggies. Let sit undisturbed for about 15 seconds, then gently stir with a silicone spatula, pushing eggs from edges to center. Continue folding slowly until eggs are fluffy and creamy, about 3-4 minutes.
  5. Finish and garnish: When eggs are mostly set but still glossy, remove pan from heat. Sprinkle chopped fresh parsley or chives on top and serve immediately.
