A quick and easy grilled corn on the cob recipe featuring smoky corn slathered with creamy, zesty lime butter for a perfect summer side dish.

  • Fresh corn on the cob (with or without husks)
  • 1/2 cup (115g) unsalted butter, softened
  • Juice of 1 lime (about 2 tablespoons/30ml)
  • Zest of 1 lime
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional garnish: chopped fresh cilantro or parsley

Instructions

  1. Preheat your grill to medium-high heat (about 400°F/200°C).
  2. In a mixing bowl, combine softened butter, lime juice, lime zest, chili powder, garlic powder, kosher salt, and black pepper. Mix until smooth and well combined. Set aside.
  3. If grilling with husks on, peel back husks without removing them, remove silk, then fold husks back. Soak corn in cold water for 10 minutes to prevent burning. If grilling husk-off, brush corn lightly with oil to prevent sticking.
  4. Place corn directly on the grill grates. Grill for 15-20 minutes, turning every 3-4 minutes until char marks appear and corn is tender.
  5. Remove corn from grill and immediately brush generously with the zesty lime butter so it melts into every kernel.
  6. Optionally, sprinkle chopped cilantro or parsley on top for freshness and color.
  7. Serve hot, best enjoyed straight off the grill while the butter is warm and melty.

Notes

Soak corn with husks on before grilling to prevent burning and keep kernels juicy. Apply butter immediately after grilling to let it melt into the corn. For vegan option, use dairy-free butter and swap chili powder for smoked paprika. Avoid microwaving leftovers to prevent rubbery kernels.
