A quick and easy recipe for classic beef tacos loaded with fresh toppings, perfect for busy weeknights or casual gatherings. Juicy seasoned beef combined with crunchy veggies and soft tortillas creates a satisfying and flavorful meal.

Ingredients

Scale
  • 1 lb ground beef (80/20 blend for best flavor and juiciness)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tbsp tomato paste
  • 1/2 cup beef broth or water
  • 1 cup shredded lettuce (iceberg or romaine)
  • 1 medium tomato, diced
  • 1/2 cup shredded sharp cheddar cheese (or Mexican blend)
  • 1/4 cup finely chopped red onion
  • 1/4 cup fresh cilantro, roughly chopped
  • 1 lime, cut into wedges
  • Optional: sliced avocado or guacamole
  • Jalapeño slices (adjust to taste)
  • 8 small soft corn or flour tortillas (6-inch size)

Instructions

  1. Dice the onion and tomato, mince the garlic, chop the cilantro, shred the cheese, and slice any optional toppings like jalapeños or avocado. This should take about 10 minutes.
  2. Heat your skillet over medium-high heat. Add the ground beef and break it up with your spatula. Cook for 5-7 minutes until browned and no longer pink.
  3. Stir in the diced onion and minced garlic with the beef. Cook for another 2-3 minutes until the onion softens and becomes translucent.
  4. Sprinkle in chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper. Stir well to distribute the spices evenly. Cook for 1 minute to toast the spices slightly.
  5. Mix in the tomato paste, then pour in the beef broth or water. Stir to combine and let it simmer for 5 minutes, allowing the mixture to thicken slightly and the flavors to meld.
  6. While the beef simmers, heat tortillas in a dry skillet over medium heat, about 20 seconds per side, or wrap in foil and warm in a low oven (around 300°F/150°C) for 10 minutes.
  7. Spoon the beef mixture onto each warm tortilla. Top with shredded lettuce, diced tomato, red onion, cheese, cilantro, and any optional toppings like avocado or jalapeños.
  8. Serve with lime wedges for squeezing over the tacos just before eating.

Notes

Toast spices briefly with beef for deeper flavor. Warm tortillas gently to avoid cracking. Add more broth if beef mixture is dry; cook longer if too wet. Avoid overcrowding pan to ensure proper browning. Fresh toppings are essential for texture contrast.
