  • 3 medium bell peppers (red, yellow, green), sliced into strips
  • 1 medium red onion, thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Juice of 1 lime
  • Small handful fresh cilantro, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the chicken breasts into thin strips, about 1/2-inch (1.3 cm) wide.
  3. Core and slice the bell peppers into strips similar in size to the chicken. Peel and thinly slice the red onion.
  4. In a large mixing bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne (if using), salt, and black pepper. Mix well.
  5. Add the chicken strips, bell peppers, and onions to the bowl. Toss until everything is evenly coated with the seasoning and oil mixture.
  6. Spread the mixture in a single layer on a prepared rimmed sheet pan lined with parchment paper or a silicone baking mat.
  7. Place the pan in the oven and roast for 15-18 minutes. Halfway through (around 8-9 minutes), gently toss or flip the chicken and veggies for even cooking and caramelization.
  8. Check the chicken’s doneness with a fork or thermometer; it should be opaque and reach an internal temperature of 165°F (74°C).
  9. Remove the pan from the oven and squeeze fresh lime juice over everything. Toss lightly to combine.
  10. Garnish with chopped fresh cilantro before serving.

Notes

If peppers cook faster than chicken, move them to the edges of the pan. For extra crispiness, broil for the last 2 minutes but watch carefully to avoid burning. Thinly slicing chicken ensures even cooking and juiciness. Toss halfway through cooking to promote even browning. Adjust cayenne pepper to taste for heat level.
