A quick and easy no-bake dessert featuring creamy cheesecake filling layered with crunchy graham crackers and fresh strawberries, perfect for summer.

  • 8 ounces (225 grams) cream cheese, softened
  • 1 cup (240 ml) heavy whipping cream
  • 3/4 cup (90 grams) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pint (450 grams) fresh strawberries, hulled and sliced
  • 1 1/2 cups (150 grams) graham crackers, crushed
  • 3 tablespoons (45 grams) butter, melted

Instructions

  1. Crush the graham crackers into fine crumbs using a rolling pin or food processor and transfer to a bowl.
  2. Pour melted butter over the crumbs and stir until the mixture resembles wet sand. Set aside.
  3. In a large bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  4. In a separate chilled bowl, whip heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture to lighten the filling.
  6. Hull and slice the fresh strawberries into thin pieces.
  7. Assemble the parfaits by layering about 2 tablespoons of graham cracker crust, 3 tablespoons of cheesecake filling, and a few strawberry slices in each cup. Repeat layers once more and finish with strawberries on top.
  8. Cover the parfait cups with plastic wrap and refrigerate for at least 2 hours or overnight to set.

Notes

Make sure cream cheese is fully softened before mixing to avoid lumps. Whip cream to stiff peaks but do not overwhip to prevent graininess. Chill parfaits for at least 2 hours for best texture. Use fresh strawberries for optimal flavor. For gluten-free, use gluten-free crackers. For dairy-free, substitute cream cheese and heavy cream with plant-based alternatives.
