  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon olive oil (for brushing before baking or reheating)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Lay out one flour tortilla on a clean surface. Spread about 2 tablespoons of pizza sauce evenly over the tortilla, leaving a small border around the edges.
  3. Sprinkle 3 tablespoons of shredded mozzarella evenly over the sauce. Add 4-5 pepperoni slices and a light dusting of Parmesan cheese and Italian seasoning.
  4. Roll the tortilla tightly from one edge to the other, making sure it’s snug but not so tight that the filling spills out.
  5. Slice the rolled tortilla into 1-inch (2.5 cm) pieces using a sharp knife. You should get about 6-7 roll-ups per tortilla.
  6. Place the roll-ups on the baking sheet cut-side up, spacing them about 1 inch apart.
  7. Brush the tops with olive oil to encourage a golden, slightly crispy finish.
  8. Bake for 15-18 minutes or until the cheese is bubbly and the edges turn golden brown.
  9. Remove from oven and let cool slightly before transferring to a wire rack or plate to prevent sogginess.
  10. For freezing: Let the roll-ups cool completely, then arrange them on a baking sheet in a single layer and freeze until solid (about 1 hour). Transfer to a freezer-safe container or bag, separating layers with parchment paper.
  11. To reheat frozen roll-ups: Bake directly from frozen at 375°F (190°C) for 12-15 minutes or until heated through and crispy on the outside.
