A quick and easy recipe for crispy buffalo chicken baked on a sheet pan, perfect for game day snacks with a flavorful, buttery buffalo sauce coating.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1/2 cup hot sauce (e.g., Frank’s RedHot)
  • 3 tablespoons unsalted butter, melted
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or oil for greasing the sheet pan
  • Optional garnish: chopped fresh parsley or green onions

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, whisk together the hot sauce and melted butter until smooth. Set aside.
  3. In a large bowl, combine the flour, garlic powder, smoked paprika, salt, and black pepper.
  4. Add the chicken pieces to the flour mixture and toss until lightly coated. Shake off excess flour.
  5. Lightly grease a sheet pan with cooking spray or oil. If using, place a wire rack on top and grease it as well.
  6. Arrange the coated chicken pieces in a single layer on the sheet pan or wire rack, ensuring they do not touch.
  7. Bake for 20 to 25 minutes, flipping the chicken pieces halfway through baking (around 12 minutes) to brown both sides evenly.
  8. When done, immediately transfer the chicken to the bowl with buffalo sauce and toss gently to coat all pieces.
  9. Place the sauced chicken back on the sheet pan or serving dish and garnish with chopped parsley or green onions if desired.

Notes

Pat chicken dry before coating to ensure crispiness. Do not overcrowd the pan to avoid steaming. Toss chicken in buffalo sauce after baking to keep crust crispy. For extra crispiness, broil for 1-2 minutes but watch carefully to avoid burning. Use almond flour for gluten-free option. Butter in the sauce mellows heat and adds richness.
