  • 1 cup refried black beans (canned or homemade)
  • 1 cup salsa roja (fresh or store-bought with smoky chipotle flavor)
  • 1/2 cup queso fresco, crumbled
  • A handful fresh cilantro, chopped
  • Lime wedges, for serving
  • Salt and pepper, to taste
  • Optional: sliced avocado, pickled jalapeños, hot sauce

Instructions

  1. Heat 1/4 cup vegetable or avocado oil in a skillet over medium heat until hot (about 350°F or 175°C), approximately 5 minutes.
  2. Fry each corn tortilla in the hot oil for 1-2 minutes per side until golden and crispy but still pliable. Drain on paper towels to remove excess oil.
  3. Warm the refried black beans in a small saucepan over low heat or microwave for 3-4 minutes, stirring occasionally.
  4. In a clean non-stick pan, melt a teaspoon of oil or butter over medium-low heat. Crack 2 eggs and cook sunny-side up for 3-4 minutes until whites are set but yolks remain runny. Season with salt and pepper. Repeat for the remaining 2 eggs.
  5. Spread a spoonful of warm refried beans on each crispy tortilla. Top each with a fried egg, then spoon over salsa roja.
  6. Sprinkle crumbled queso fresco and chopped cilantro on top. Add a lime wedge on the side.
  7. Serve immediately while warm and crispy.
