Easy Crispy Garlic Butter Steak and Potatoes Recipe for Perfect Dinner

A simple and satisfying recipe featuring pan-seared steak and crispy garlic butter potatoes, perfect for a quick and hearty dinner.

  • 1 lb ribeye or sirloin steak, about 1-inch thick
  • 1 lb baby Yukon Gold or red potatoes, halved or quartered
  • 4 tablespoons unsalted butter (about 56 g)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme or rosemary, finely chopped (optional)
  • Salt and freshly ground black pepper, to taste
  • Optional: a squeeze of fresh lemon juice or a pinch of red pepper flakes

Instructions

  1. Wash and halve the baby potatoes. Toss them in a bowl with 2 tablespoons olive oil, a pinch of salt, pepper, and half of the minced garlic. Set aside.
  2. Pat the steak dry with paper towels. Season both sides generously with salt and freshly ground black pepper. Let rest at room temperature for about 10 minutes.
  3. Heat a large skillet over medium heat and add 2 tablespoons unsalted butter. Once melted and foaming, add the potatoes cut side down. Cook undisturbed for about 8 minutes until golden and crispy. Stir occasionally after the initial sear. Add fresh herbs if using.
  4. Push the potatoes to the side of the skillet and add the steak. Sear for 3-4 minutes on each side for medium-rare (internal temp around 130°F/54°C). Add the remaining garlic to the butter and spoon it over the steak as it cooks.
  5. Check doneness with a meat thermometer if possible. Transfer steak to a plate and tent loosely with foil to rest for 5 minutes.
  6. While steak rests, stir potatoes and let them crisp up again if needed. Adjust seasoning with salt or pepper.
  7. Slice steak against the grain, plate alongside garlic butter potatoes, and drizzle any leftover butter from the pan on top. Add a squeeze of fresh lemon juice if desired.

Notes

Do not overcrowd the pan when cooking potatoes to ensure crispiness. Add garlic toward the end of cooking to prevent burning. Rest steak after cooking to retain juices. For dairy-free, substitute butter with vegan margarine or coconut oil. Potatoes can be roasted in the oven beforehand to speed up cooking.
