  • 4 ripe but firm peaches, halved and pitted
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon olive oil or melted butter
  • 1/2 teaspoon ground cinnamon (optional)
  • 4 generous scoops vanilla ice cream
  • Fresh mint leaves for garnish (optional)
  • A squeeze of lemon juice (optional)

Instructions

  1. Preheat your grill to about 375°F (190°C) or heat a grill pan over medium-high heat for about 5 minutes.
  2. Rinse and dry the peaches, then cut them in half and remove the pits. Optionally, gently score the flesh with a knife.
  3. In a small bowl, combine brown sugar, olive oil (or melted butter), and ground cinnamon if using. Stir until thick paste forms.
  4. Brush the cut side of each peach half generously with the sugar mixture.
  5. Place peaches cut-side down on the hot grill. Grill for 3-4 minutes without moving to get caramelization and grill marks.
  6. Flip peaches carefully with tongs and grill the skin side for another 2 minutes to warm through.
  7. Remove peaches from grill and place cut-side up on serving plates.
  8. Optionally squeeze fresh lemon juice over peaches. Top each half with a generous scoop of vanilla ice cream.
  9. Garnish with fresh mint leaves and serve immediately while warm and melty.

Watch grill closely to avoid burning sugar; ripe but firm peaches hold shape best. Oil grill grates before heating to prevent sticking.
