  • ½ cup (113g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ½ cup (65g) all-purpose flour
  • ¼ cup (25g) unsweetened cocoa powder, sifted
  • 1 tsp espresso powder (optional)
  • ½ tsp salt
  • About 20 medium-sized fresh strawberries, washed and dried thoroughly
  • 8 oz (225g) dark or semi-sweet chocolate chips
  • 1 tbsp coconut oil or vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, whisk together melted butter and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  3. In a separate bowl, sift together flour, cocoa powder, espresso powder (if using), and salt. Gradually fold the dry mix into the wet ingredients using a spatula, just until combined. Do not overmix.
  4. Pour the batter into the prepared pan, smoothing the top. Bake for 20-22 minutes or until a toothpick inserted near the center comes out with a few moist crumbs. Let cool completely in the pan.
  5. Lift the brownie out using the parchment paper and cut into 1-inch (2.5 cm) squares.
  6. Slice each strawberry in half lengthwise. Place one strawberry half, flat side down, on each brownie square, pressing gently.
  7. Arrange the brownie-strawberry bites on a baking sheet and freeze for at least 30 minutes.
  8. Melt chocolate chips with coconut oil using a double boiler or microwave, stirring until smooth and glossy.
  9. Dip each frozen brownie-strawberry bite into the melted chocolate, covering completely. Let excess chocolate drip off and place on a parchment-lined tray.
  10. Chill the dipped bites in the refrigerator for 15-20 minutes until the chocolate hardens.

Notes

Ensure strawberries are dry before assembling to prevent chocolate from seizing. Freeze brownie-strawberry bites before dipping to keep chocolate shell crisp. Use good quality chocolate for best results. Warm chocolate gently if it thickens during dipping. Use a warm knife dipped in hot water for cleaner brownie cuts.
