  • 2 tablespoons whole milk or cream (or dairy-free milk if preferred)
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat oven to 425°F (220°C). Toss diced Yukon Gold potatoes with olive oil, rosemary, salt, and pepper until evenly coated. Spread in a single layer on a parchment-lined baking sheet. Roast for 25-30 minutes, flipping halfway through, until golden and crispy outside and tender inside.
  2. While potatoes roast, heat a large skillet over medium-high heat. Add ground turkey sausage, breaking it apart with a spatula. Sprinkle paprika, garlic powder, black pepper, and cayenne (if using) over the meat. Cook for 8-10 minutes, stirring occasionally, until browned with crispy edges. Drain excess fat if needed and keep warm.
  3. Crack eggs into a mixing bowl. Add milk or cream, salt, and pepper. Whisk vigorously until slightly frothy. In a clean non-stick skillet, melt butter over medium-low heat. Pour in eggs and let sit undisturbed for 30 seconds. Gently stir with a spatula, pushing eggs from edges to center. Continue cooking slowly, stirring occasionally, until eggs are softly set but still creamy, about 3-4 minutes. Remove from heat just before fully cooked.
  4. Plate roasted potatoes, add a generous scoop of turkey sausage, and top with fluffy eggs. Garnish with chopped parsley or chives and a dash of hot sauce if desired. Serve immediately.

Use room temperature eggs and whisk vigorously with milk or cream to achieve fluffy eggs. Do not overcrowd the pan when cooking sausage to ensure crispiness.
