A quick and easy homemade lunch wrap featuring crispy turkey, fresh veggies, and melty cheddar cheese wrapped in a warm tortilla. Perfect for busy days or a light dinner.

Ingredients

  • Large flour tortillas (10-inch)
  • Thinly sliced turkey breast (6 oz / 170 g)
  • Crispy cooked bacon (3 slices)
  • Sharp cheddar cheese slices (2 slices)
  • Shredded green cabbage (1 cup / 70 g)
  • Ripe tomato, thinly sliced (1 medium)
  • Crisp cucumber, sliced thin (½ cup / 50 g)
  • Leafy romaine lettuce (½ cup / 25 g), chopped
  • Mayonnaise (2 tbsp / 30 ml)
  • Dijon mustard (1 tbsp / 15 ml)
  • Salt and freshly ground black pepper to taste
  • Olive oil or butter (1 tbsp / 15 ml)

Instructions

  1. Rinse and dry all fresh veggies thoroughly. Thinly slice the tomato and cucumber. Shred the cabbage finely and chop the romaine lettuce. Toss the cabbage and lettuce lightly in a bowl with a pinch of salt and pepper.
  2. In a small bowl, stir together the mayonnaise and Dijon mustard until smooth.
  3. Lay one tortilla flat on your work surface. Spread about 1 tablespoon of the mayo-mustard mixture evenly over the tortilla, leaving about 1 inch around the edges clear. Layer the turkey slices evenly over the spread, followed by crispy bacon slices, cheddar cheese, and then the fresh veggies. Season lightly with salt and freshly ground pepper.
  4. Fold in the sides of the tortilla, then roll tightly from the bottom up, keeping the filling snug inside.
  5. Warm your skillet over medium heat and add olive oil or butter. Place the wrap seam-side down in the pan and press gently with a spatula. Cook for 3-4 minutes until golden brown, then carefully flip and cook the other side for another 3-4 minutes until crispy and cheese is melted.
  6. Transfer the wrap to a cutting board and let it rest for a minute. Slice diagonally in half and serve immediately.

Notes

Use whole wheat or gluten-free tortillas for dietary needs. For vegetarian option, swap turkey and bacon for tempeh or grilled mushrooms and add avocado. Press gently when cooking to avoid squashing the wrap. Let the wrap rest before slicing to hold together better. Avoid microwaving to keep crispiness.
