  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 680 g)
  • 1 whole head of garlic, top sliced off
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons chopped fresh rosemary (or 2 teaspoons dried)
  • 2 tablespoons chopped fresh thyme (or 2 teaspoons dried)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 lemon, sliced
  • ½ teaspoon smoked paprika (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the whole garlic head about ¼ inch to expose the cloves. Drizzle with a little olive oil and wrap tightly in foil.
  2. Pat chicken thighs dry with paper towels. In a large bowl, combine 3 tablespoons olive oil, chopped rosemary, thyme, garlic powder, onion powder, salt, pepper, and smoked paprika if using. Toss the chicken until well coated.
  3. Place the seasoned chicken thighs skin-side up on a prepared sheet pan, spaced about 1 inch apart. Nestle lemon slices around and under the chicken pieces.
  4. Place the foil-wrapped garlic head on the sheet pan near the chicken. Roast everything for 35-40 minutes until chicken skin is golden and crispy and internal temperature reaches 165°F (74°C).
  5. If skin isn’t crispy enough, broil for an additional 2-3 minutes, watching closely to avoid burning. Remove garlic and let cool slightly before squeezing out soft cloves to spread on chicken or serve alongside.
  6. Let chicken rest for 5 minutes before serving to allow juices to redistribute.

Patting the chicken dry before seasoning is essential for crispy skin. Wrapping garlic in foil allows it to caramelize slowly without burning. Broil at the end if skin needs extra crispiness. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Leftovers reheat best in the oven to maintain crispiness; avoid microwaving.
