  • 1 large egg, beaten (for egg wash)
  • 1 teaspoon brown sugar (optional, for sprinkling)
  • Pinch of freshly cracked black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. On a lightly floured surface, unfold the thawed puff pastry sheets. Cut each sheet into 12 equal squares (approximately 3×3 inches). Keep them cold until ready to use.
  3. Remove the rind from the brie and cut the cheese into small cubes about ½ inch.
  4. In a small bowl, mix the cranberry sauce with the chopped rosemary and a pinch of black pepper.
  5. Place a brie cube in the center of each pastry square. Top with about 1 teaspoon of the cranberry-rosemary mixture.
  6. Fold the corners of the puff pastry toward the center, pinching lightly to seal but leaving a small opening at the top for steam to escape.
  7. Lightly brush each pastry with the beaten egg to give a golden shine and help crispness.
  8. Optionally, sprinkle a tiny pinch of brown sugar on each bite for a caramelized finish.
  9. Bake for 15-18 minutes or until puff pastry is puffed and golden brown. Watch closely after 12 minutes to prevent burning.
  10. Remove from oven and let the bites cool for 5 minutes before serving.
