  • 2 cups cooked chicken breast, shredded (280 g)
  • 1/2 cup buffalo sauce (120 ml)
  • 2 oz cream cheese, softened (57 g)
  • 1/2 cup shredded cheddar cheese (50 g)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Black pepper to taste
  • 1/2 cup blue cheese crumbles (75 g)
  • 1/4 cup mayonnaise (60 ml)
  • 1/4 cup sour cream (60 ml)
  • 1 tsp fresh lemon juice
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • Optional: chopped fresh chives or parsley for garnish

Instructions

  1. Activate the yeast: In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for 5-7 minutes until foamy.
  2. Make the pretzel dough: In a large bowl or stand mixer, combine flour and salt. Pour in the yeast mixture and melted butter. Mix until a shaggy dough forms, then knead for 5-7 minutes until smooth and elastic.
  3. Let the dough rise: Cover the bowl and leave in a warm spot for 45 minutes to 1 hour until doubled in size.
  4. Prepare the buffalo chicken filling: Mix shredded chicken with buffalo sauce, softened cream cheese, shredded cheddar, garlic powder, onion powder, and black pepper until combined.
  5. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Shape the pretzel bites: Punch down the dough and roll it out into a 12×16 inch rectangle. Cut into 1.5-inch squares. Place a spoonful of buffalo chicken filling on half the squares.
  7. Seal the bites: Top each filled square with a plain square and pinch edges tightly to seal. Shape into small balls or squares.
  8. Boil in baking soda water: Bring a large pot of water to a boil, add baking soda. Drop pretzel bites in batches for 30 seconds until they float. Remove and place on baking sheet.
  9. Bake: Brush tops with melted butter and sprinkle coarse salt if desired. Bake for 12-15 minutes until deep golden brown and crispy.
  10. Make the blue cheese dip: Combine blue cheese crumbles, mayonnaise, sour cream, lemon juice, garlic powder, salt, and pepper. Mix until creamy but chunky. Chill until serving.
