These crispy bacon-wrapped jalapeño poppers feature spicy jalapeños stuffed with a creamy blend of cream cheese and sharp cheddar, wrapped in smoky bacon and baked to perfection. Perfect as a quick, crowd-pleasing snack for any occasion.

  • 12 medium-sized jalapeños, halved and seeded
  • 8 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder (optional)
  • 1/2 teaspoon smoked paprika
  • 12 thin slices bacon (center-cut recommended)
  • Freshly ground black pepper, to taste
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wearing gloves, slice jalapeños in half lengthwise and scoop out seeds and membranes to control heat.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
  4. Fill each jalapeño half generously with the cheese mixture using a spoon or small scoop.
  5. Wrap each stuffed jalapeño half with one slice of bacon, slightly overlapping the ends. Secure with a toothpick if needed.
  6. Place wrapped poppers seam side down on a wire rack set over a baking sheet or directly on the baking sheet.
  7. Bake for 20-25 minutes until bacon is crispy and golden brown, rotating the tray halfway through if needed.
  8. Let poppers rest for 5 minutes after baking to allow cheese to set slightly.
  9. Serve warm and enjoy.

Notes

Use gloves when handling jalapeños to avoid irritation. For extra crispy bacon, broil for 1-2 minutes at the end but watch closely to prevent burning. Remove toothpicks before serving. Leftovers keep well refrigerated for up to 3 days and reheat best in the oven at 350°F for 10 minutes to maintain crispiness.
