A quick and elegant appetizer featuring tender asparagus wrapped in salty, crispy prosciutto, roasted to perfection and finished with a splash of lemon juice.

  • 1 bunch asparagus (about 1 pound / 450 grams), trimmed
  • 810 thin slices prosciutto (about 4 ounces / 115 grams)
  • 1 tablespoon extra virgin olive oil
  • Juice of half a lemon, freshly squeezed
  • Freshly cracked black pepper, to taste
  • Optional: red pepper flakes for a subtle kick
  • Optional: grated Parmesan for a cheesy finish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and pat dry the asparagus stalks. Trim off the woody ends by snapping them where they naturally break (about 1 to 2 inches).
  3. Take about 3 to 4 asparagus spears and wrap one slice of prosciutto around them, starting at the base and spiraling up to the tips. Adjust the prosciutto so it’s snug but not tearing.
  4. Place the wrapped bundles seam-side down on a parchment-lined baking sheet. Drizzle lightly with olive oil and sprinkle with freshly cracked black pepper.
  5. Roast for 10–12 minutes until the prosciutto is crispy and golden and the asparagus is tender but still slightly crisp. Optionally broil for 1–2 minutes for extra crispiness, watching carefully to avoid burning.
  6. Remove from oven and squeeze fresh lemon juice over the bundles. Optionally sprinkle red pepper flakes or grated Parmesan.
  7. Serve immediately warm for maximum crispness.

Notes

Use thinly sliced prosciutto for best crispiness. Keep asparagus dry before wrapping to avoid steaming the prosciutto. Do not overcrowd the baking sheet to ensure even crisping. For a thinner wrap, cut prosciutto slices lengthwise. Leftovers can be reheated in a 375°F oven for 5–7 minutes; avoid microwaving.
