  • 2 tsp ground cinnamon for crumble
  • 3 tbsp unsalted butter (42g), melted for crumble

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan with butter or nonstick spray and optionally line the bottom with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
  3. In a separate bowl, melt the butter and let it cool slightly. Add granulated sugar and brown sugar, stirring until smooth.
  4. Beat in the eggs one at a time, then stir in the apple cider and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Avoid overmixing.
  6. In a small bowl, mix the granulated sugar, cinnamon, and melted butter for the crumble until crumbly but moist.
