  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten

  • For the Creamy Ranch Dip:
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  1. Wash and dry the zucchinis thoroughly. Cut each into sticks approximately 1/2 inch thick. Pat dry again to remove excess moisture.
  2. In a shallow bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, smoked paprika, salt, and pepper. Mix well.
  3. In another bowl, beat the eggs until smooth.
  4. Dip each zucchini stick into the egg wash, letting excess drip off, then roll in the breadcrumb mixture. Press lightly to adhere coating. Set on a baking sheet or plate.
  5. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  6. Lightly spray the air fryer basket with cooking spray. Arrange zucchini fries in a single layer without overlapping.
  7. Cook for 10-12 minutes, flipping halfway through and spraying lightly with oil again. Watch closely near the end for golden color and crispiness.
  8. While fries cook, whisk together mayonnaise, sour cream, lemon juice, dried dill, garlic powder, onion powder, salt, and pepper in a small bowl. Adjust seasoning to taste.
  9. Serve fries warm immediately with the creamy ranch dip.
