  • ½ teaspoon ground black pepper
  • ½ teaspoon garlic powder (optional)

Instructions

  1. Peel 2 medium sweet potatoes and slice into ¼-inch thick fries, about 5 inches long. Aim for uniform size so they cook evenly.
  2. Place the sliced fries in a large bowl of cold water and soak for at least 30 minutes to remove excess starch. (If short on time, 15 minutes works, but longer is better.)
  3. Drain the fries and pat them completely dry with a clean kitchen towel or paper towels.
  4. Toss the dry fries in 2 tablespoons extra virgin olive oil, 1 tablespoon finely chopped fresh rosemary, 1 teaspoon flaky sea salt, ½ teaspoon black pepper, and ½ teaspoon garlic powder (optional). Mix well to coat evenly.
  5. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  6. Place the fries in a single layer inside the air fryer basket. Do not overcrowd. Cook for 15-18 minutes, shaking the basket or flipping fries halfway through. Keep an eye after 12 minutes to avoid burning.
  7. Check for doneness; fries should be golden brown with crispy edges and tender inside. Cook an extra 2-3 minutes if needed for more crunch.
  8. Serve immediately, optionally sprinkling additional sea salt or fresh rosemary.

Soaking the fries in cold water for at least 30 minutes removes excess starch and helps achieve crispiness. Dry fries thoroughly before seasoning.
