  • Salt and pepper to taste
  • For the Garlic Aioli Dip:
  • 1/2 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper to taste

Instructions

  1. Peel and cut 2 medium sweet potatoes into 1/4-inch thick fries, keeping them as uniform as possible for even cooking (about 10 minutes).
  2. In a large bowl, sprinkle 1 tablespoon cornstarch over the fries and toss to coat evenly.
  3. Drizzle 2 tablespoons olive oil over the fries and toss again to coat all fries.
  4. Add 1 teaspoon garlic powder, 1/2 teaspoon smoked paprika (if using), salt, and pepper. Mix well.
  5. Preheat the air fryer to 400°F (205°C) for about 3 minutes.
  6. Place fries in a single layer inside the air fryer basket. Cook in batches if necessary to avoid overcrowding.
  7. Air fry for 15-18 minutes, shaking the basket every 5 minutes to promote even cooking, until fries are golden and crispy on the edges but tender inside.
  8. While fries cook, whisk together 1/2 cup mayonnaise, 1/2 teaspoon garlic powder, 1 tablespoon lemon juice, 1 teaspoon Dijon mustard (optional), and salt and pepper to taste to make the garlic aioli.
  9. Once fries are done, transfer to a serving plate, sprinkle with a pinch of salt, and serve immediately with garlic aioli on the side.

Notes

If fries aren’t crispy enough, try tossing with a little more cornstarch next time. Shake the basket every 5 minutes for even cooking. The garlic aioli complements the natural sweetness of the fries perfectly. For a dairy-free aioli, substitute mayonnaise with vegan mayo or avocado-based dip. Oven baking is an alternative but may yield less crisp fries.
