  • 1 package refrigerated pie crust (two 9-inch crusts) or homemade flaky dough
  • 1 tablespoon unsalted butter, melted
  • 1 large egg, beaten
  • Optional: 1/2 teaspoon vanilla extract

Instructions

  1. In a medium bowl, combine diced peaches, sugar, lemon juice, cornstarch, cinnamon, and vanilla extract if using. Stir gently and set aside to macerate for about 10 minutes.
  2. On a lightly floured surface, roll out the pie crust to smooth any creases. Using a 4-5 inch round cutter, cut out 8-10 circles from two crusts.
  3. Spoon about 2 tablespoons of peach filling onto the center of half the dough circles, being careful not to overfill.
  4. Brush edges of filled circles with water or beaten egg. Place a plain dough circle on top and press edges gently. Crimp edges with a fork and poke small holes or slits on top to vent steam.
  5. Brush tops of each hand pie with beaten egg, then lightly brush melted butter over the egg wash.
  6. Preheat air fryer to 350°F (175°C) for about 3 minutes.
  7. Arrange pies in a single layer in the air fryer basket, leaving space between them. Cook for 10-12 minutes until crust is golden and crisp. Cook in batches if necessary.
  8. Transfer pies to a cooling rack and let rest for 5 minutes before serving.
